Project Description: Identification of novel yeast strains using a proprietary isolation pipeline that relies on insights from ecology and evolution to find metabolically superior yeasts will allow for the development and commercializaiton of new yeasts. The newly identified yeasts offer unique traits of interest to the bakery products, food flavor, and yeast manufacturing industries. Such valuable traits include novel metabolisms and production of natural 'fruity' flavors.
